What's so Great about a Beet?

Just consider the color of beets. Something with that amount of intense color that grows in the ground just has to be full of goodness. And beets are! Fermented beets are even better than plain, boiled or pickled. Fermentation changes the whole game when it comes to nutrients and benefits of a vegetable. It's the easiest process and so delicious. Beets are high in fibre, control blood sugar, lower cholesterol, and keep things regular! Beets contain nitrates that help widen blood vessels - that can help with blood pressure and may also improve athletic performance and brain function. Eat a beet! Or 20....
